Automatic, continuous operation tempering machine from melting by bain-marie to tempering by cooling gas with refrigerant compressor. The bowl capacity, which is equipped with a mixer that keeps the chocolate fluid and even, is 80 kg and it is made of stainless steel AISI304. A wire-mesh belt is supplied with the machine by obtaining an enrobing system complete also with dispenser, blower, wire-mesh belt beater and tail-cutting device. The enrobing wire-mesh belt has a working width of 600 mm and it is composed of two parts. The first one is the loading one and the second one carries the product into the coating chamber. Under the wire-mesh is positioned a stainless steel bowl equipped with feed roller and scraper for covering the bottom of the product. The extractable auger allows a fast and deep cleaning of the machine for switching swiftly from processing one type of chocolate to another. High precision probes control all temperatures through a specific circuit board. The machine is equipped with a flow-stopping pedal for the dosing of the desired quantity of product and an automatic starting timer. Moreover it is possible to add a vibrating table, useful accessory for the preparation of chocolate pralines, Eastern eggs and all hollow shapes. Moreover the chocolate flow is adjustable.
